4lb elderberries

1kg sugar

yeast

 

mash and soak berries for 4/5 days in about a gallon of water in a clean bucket.

 

strain onto sugar and add yeast

 

ferment fully in the normal way in a demijohn with an airlock.

 

(mine is bubbling away nicely :blink: )

Might be a bit "thin", I always used to put in 1-2lb of raisins/sultanas in the initial ferment. Remember that elders have huge amounts of tannin in them so it will need to be stored 2-3 yrs in a demi and racked every 4-6months to allow it to drop out of suspension.

 

 

exactly what we do, we've just started drinking the 5 gallons of 2007 we brewed :D

Top tip!

 

If the fermentation is too vigorous and the bubbling rises through the air lock, use an elastic band to secure a clean food plastic bag over the neck of the demijohn until the fermentation dies down a bit.

A friend of mine used to fire his up by puting in a Half bottle of Admiral Morgans Navy Spiced rum(That stuff he made blew your socks off and melted the shoes you where wearing) :whistling: Jim.(Night Owl).
