Nettle and wild garlic soup Ingredients 10 - 15 leaves, flower stems and flowers of wild garlic 1 supermarket bag of nettle tops 1 large potato dessert spoon each of butter and olive oil 900mls vegetable stock Required rubber gloves, large pan or pot,hand blender. Method Wash the garlic and nettle leaves, peel and chop the potato, heat the oil in a large pot and add the chopped garlic leaves and potatoe to saute for around 5 minutes, have the stock prepared and add half to the pot and bring to a simmer, wearing rubber gloves push as many nettle tops as possible into the simmering stock and press down with a wooden spoon, continue until the pan is full adding more stock as needed. When the potatoes are cooked remove the pan from the heat and blend the mixture smooth , here you can add seasoning as desired, or a dollop of double cream. Serve hot or cold for the latter a spoong of plain yougart or soured cream enhances this delicious dish even further. 39TDS Posted April 25, 2011 Report Share Posted April 25, 2011 I was looking for a nettle soup recipe last night. There's plenty about and I also have loads of wild garlic about too.
