marabella plum jam

Just made some marabella plum jam (red). The red plums make a loverly colour jam. Easy to make.

 

6 pound of fruit

6 pound of sugar

Half pint of water

 

Put the sugar and water into the pan, low heat untill it has disolved. Add the plums and bring to the boil. Stir every so often.

This stops it burning the pan. Once it reaches setting point I take some of the stones out but not all of them. Warm the jars before filling with jam.

Seems to go down well with most of the family.

As promised....

 

Makes 2 jars

3 lbs plums weighed after being pitted and halved

1 large onion -chopped

thumb sized piece ginger, grated

300 g sugar

6 fl oz vinegar

2 teaspoon ground coriander

1/2 teaspoon salt

1 teaspoon chilli

1 small but hot chilli chopped up finely including the seeds

pinch garam masala

 

Put plums into a pan, bring to boil then lower heat to simmer for about 15 minutes until lots of juice appears. Strain off most of the juiceand use for something else.* Add onion and ginger to the plums and simmer for another 15 minutes. Blitz with a hand blender or in a liquidiser then push through a sieve and return to a clean pan. Add vinegar, sugar and spices. Bring to boil then simmer until thickened, stirring to avoid the chutney burning. Pour into sterilised jars .

 

 

I haven't tried it with rabbit yet but I have just shot two this evening so will try them.

 

It is fantastic with stilton though.

* Mix the plum juice with a little sugar and store in the fridge to mix with sparkling water for a refreshing drink.

Let me know how you get on with the blackberry and apple :good: made some blackberry yesterday in the bread maker and its full of flavour but slightly runny :yes: got some pectin today and will have another bash :good: BB

 

Hi. Made the blackberry and apple jam today, set ok. I always use a proper jam pot to make mine in, sometimes needs a bit more time than the recipe says. I have never used pectin for this type of jam. How did you get on with the pectin.

handlebar's,(take the s off) wife makes a fantastic Runner Bean Chutney.

She sells at the Farmers Markets in a 30 mile radius of Flitwick/Ampthill.

If you have excess fruit locally Vickie will always take it off you, and you will probably get a litle something for your trouble.
