FalconFN Posted August 15, 2011 Report Share Posted August 15, 2011 You only need a sharp knife. Just cut all the way around the legs just above the 'wrist' and snap the bone like you snap a pencil. If they are big bones a sharp tap with the knife beforehand will help. For the head just skin bunny and when you've pulled the skin off the front legs slice around the neck and twist the head off, simple. shoughton Posted August 16, 2011 Report Share Posted August 16, 2011 I used to use a (large, heavy chinese style) cleaver - but it's totally unnecessary. I now just cut around the first joint jsut above the foot and stick the point of the knife right into the joint, cutting the cartledge and hence releasing the joint. This leaves a clean 'stump' with no broken bone splinters or mess. For the head/neck I just cut all around at the base of the neck and twist off the head. All sounds involved but I can complete a rabbit from in fur to a complete set of joints in under 2 minutes - unless it's an old tough buck then it can take a bit longer!
