After i've gutted whatever i've just shot out in the field i always give my blade a wipe on some grass or whatevers to hand just to clean any residual blood off. If it is leather the you will never get it clean and you should try and put the knife in the sheath clean or not at all. If you can't clean it in the field then take a cloth to wrap it in until you get home and you can wash it. The best sheath to use is plastic or Kydex so you can wash it properly in saopy water when you get home. It is just that leather is porous so the gunk will get right into it and you can't get anything down into the sheath to clean it. I know some people who could make a kydex one so you can save the leather for when you are not doing game prep. Alternatively something like this has a plastic sheath and is so cheap you abuse it and not worry.
