Millomite Posted May 2, 2006 Report Share Posted May 2, 2006 Hi guys I remember watching a river cottage where they showed an easy method of removing pigeon breasts. I normally slice them off with a knife but I never seem to be able to remove the meat. This method involved pulling the breasts out with your hand? can anyone explain with pics? henry d Posted May 2, 2006 Report Share Posted May 2, 2006 As I don`t have a dead pigeon or camera handy try this - Twist off both wings,then either insert thumbs into neck or vent cavity,then pull back away from the breast.This is the same action as you would use to break open a bread roll without a knife. I have a bin on one side for the carcase and a bowl of water to drop the breasts in. I tend to stick with plucking and removing the breasts then I roast the carcase and then boil with veggies to make a stock that is similar to consomme`. Lee 1991 Posted June 19, 2006 Report Share Posted June 19, 2006 i usually just slice the breasts off as you said but i also have the same problem so now what i do is pluck the breast cut along the breast bone gently then peel away skin then go right to the bottom of the breast the cut a slit directly below in the middle put your thumb in this slit and pull off the whole breast Lee :blink: Quote Link to comment Share on other sites More sharing options...
Bipolar Posted June 20, 2006 Report Share Posted June 20, 2006 Snap off the wings take a sharp knife and skin back the breast, locate the edge of the sternum cut the flesh up to the wing socket and repeat on the other side you should then be able to lift the whole breast away from the carcass with breast bone attached, the same as a turkey crown down at Asda but only a lot smaller!
