hendersons Posted August 29, 2011 Report Share Posted August 29, 2011 (edited) This ones quite an easy one. I just use the loins because I find it makes a decent meal From 3 or 4. It also saves the rest of the rabbit for something else. Ingredients: 500g Puy lentils (washed well) Some pancetta (normal bacon will do) as much as you can 1 onion 2 carrots 1 bay leaf 2 cloves garlic Stock or stock cube ( whatever flavour you fancy) Rabbit loins I'll leave the quantity up to you Fry the bacon until it is crispy and then remove it from the pan. add the veg to the pan and cook it Until quite soft. Now throw in the lentils, bacon and enough stock to cover it by a couple of cms add a little more if needed Simmer until the lentils are soft and some of the liquid reduced. Then place the rabbit on top and leave to poach. The lentils can benefit from a few chopped herbs and a willy of butter stirred into it.
