v5uk Posted August 29, 2011 Report Share Posted August 29, 2011 Mojo sauce is a Spanish sauce from the Canarian islands and is pronounced Moko sauce 2 red bell peppers 1 garlic bulb chop roughly 200ml Extra Virgin Olive Oil 150ml White Wine Vinegar 3 or 4 fresh chillies depending on how hot you like it half teaspoon of paprika 1 teaspoon sea salt one tin of chopped tomatoes first off slice the bell peppers remove all seeds and grill skin side up till the skin is burnt and bubbling, now pull the skins off, put the peppers in cold water to help remove the skins. now get a pan and put in all the above ingredients, bring to the boil then simmer and reduce for 15 – 20 mins. Then blits in a blender and leave to cool (it will go like a spicy red mayonnaise) lovely cold on hot new potatoes, I like it on pan fryed rabbit or as a dip with natchoes is how my friends like it when we have a party. hope you enjoy Steve Quote Link to comment Share on other sites More sharing options...
