Lord Geordie Posted May 4, 2006 Report Share Posted May 4, 2006 (edited) Well i just whacked up a nice fish dish and thought you may all be interested Main part consists of 3 fillet's of fish (i used Pollock) but can be ANY fish i guess 1 onion half a normal sized tin of sweetcorn Half a tin of Plum Peeled tomatoes 1/3 of a tube of Tomato puree 2 meduim potatoes Oregano Chilli powder Salt and fresh cracked pepper Water olive oil Garlic granules or Garlic salt Also make a batch of rice and add a Pelau rice cube (knorr) Put Tomato Puree in a bowl with Salt and fresh cracked pepper and a pinch of Chilli powder and the oregano and mix together and microwave for 45 seconds to heat through and help the herbs and spice sweat into the tomato. Add the Sweetcorn chopped onion the Plum Peeled tomotos and cubed potato splash of Olive oil Then a pint of Water to thin it out (most of this will be lost durin the cooking period) Pour the mix into a oven proof dish and place your fish fillets on top and give them a good dunk (dont be afraid to get it under the mix as Fish can swim Sprinkle the Garlic Granules or Garlic salt over the top and place the lid on ready to go into the oven 180 degrees for 45 mins Now take a pan of water and add enough rice for 3 servings. Pinch of salt When the rice comes to the boil drop to a simmer and add Pilau rice stock cube Let simmer till your rice is ready then drain and place to one side. To serve Place rice on a deep plate and place one of your fish fillets from the oven dish on top of the rice and take a good scoop of the sauce with a ladel and drizzle it over your fish Sprig of Parsely and off you go Just something i played with and it came out nice :unsure: Oh and did i mention it's a LOW fat dinner LG Edited May 4, 2006 by Lord Geordie Quote Link to comment Share on other sites More sharing options...
COLINSRI Posted May 4, 2006 Report Share Posted May 4, 2006 LG thats sounds lovely. I am trying to eat balanced so that looks like a very wholsome dinner. Rice and fish are both very good for you.
