John_R
In this mild weather I only hang a couple of days. I cover the dressed birds in bacon, put quarter of a lemon inside and roast hot and fast to avoid drying them out. I forget the settings on the oven, probably gas 7 for 30 mins, checking to see if it needs a little more.

Great way of quick cooking that keeps the meat moist and looks the nuts!! Turn the bird over and cut the spine out on both sides with scissors or a sharp serrated knife. Flatten the bird out with a few whacks and away you go. To hold it in place, you can put sticks/skewers through diagonally, but not really necessary - Just give the bird a few thumps with the flat of your hand. As far as hanging goes, i reckon it's unnecessary and does nothing to help the flavour.
