rimfire4969 Posted December 13, 2011 Report Share Posted December 13, 2011 After using many recipes on here for game, rabbit etc i thought i would like to do a Pheasant Pate for Christmas, but cant find any recipes. Does anyone have a good one they could share or a pointer in the right direction. Also If i did one in the next day or two would it keep for 10 - 14 days or could it be frozen? berties Posted December 19, 2011 Report Share Posted December 19, 2011 (edited) Have a look at a rillettes recipe on line basically you are slow cooking the meat in duck fat then either preserve in a jar or press into a terrine dish,other choices are if you can gather enough livers make a parfait but can get a bit metallic so best to mix in with a few chicken livers for cold use,or you can cure the meat cook and set in various game jellies,terrines can be a art I can produce a master piece of a set terrine and get one of my young chefs to replicate it and it ends up on staff food,with a rillette you can't go that wrong,its for spreading on a nice piece of toast, good luck Edited December 19, 2011 by berties Quote Link to comment Share on other sites More sharing options...
