AlistairB Posted February 2, 2012 Report Share Posted February 2, 2012 (edited) I've got a Lansky kit (not the deluxe) and my knives have never been sharper, also very easy to use and takes no time at all to get a great edge. agjm Posted February 2, 2012 Report Share Posted February 2, 2012 Ive got the standard kit and it does a great job, I would like a finer stone but i think that comes with the deluxe (mine kit only has 3 stones). As Blackla says make sure you write down what angle you have sharpened to. I always find i've forgotten the angle by the time the knife needs sharpening again. I now sharpen all mine to the same angle (25 degrees i think) except my Opinel which goes on the shallowest angle - makes life easier! I've got the standard one with 3 stones (didn't want to spend extra on the deluxe set) and have found you can get a very good edge, though it would be nice to have an extra fine stone it's probably not essential.
