oscarsdad
I think I may be a little weird as I just spent the last two hours butchering two roe haunches into roasting joints, steaks, stewing lumps and stir fry strips....I have never worked on anything larger than a hare before and I found it strangled enjoyable! Does anyone else enjoy this or is it just me? I found a great website which helped a lot but then I got a bit bored reading it and sort of made it up as I went along! Link below: http://www.bestpracticeguides.org.uk/carcass_butcher.aspx My dogs are now the poshest dogs in the village as they have been chewing away on roe femurs and have a few off cuts for their dinner tomorrow!
