Scottoj18
as easy as it sounds, makes about 20 party sasusage rolls.. spot on for christmas! you will need a meat grinder for this. 1 sheet of ready rolled puff pastry 2 pigeon breasts 4 plain pork sausage 2 birds eye chillis pinch of salt black pepper 2 egg yoks for glaizing and sticking the pastry together take the skin off of the pork sausage, chop the pigeon into small chunks, add choped chilli with out the seeds (way to hot if you keep them in), pass through a meat grinder twice or untill your happy of a good mix, season with salt and pepper, place a line of the meat on the pastry fold over and make sure there is no air inside, use the egg yok to stick the pastry down press with a fork to seal, galse all over with the egg yok cut and place on a oven tray put in a pre-heated oven. i've got a gas oven so times for fan will be diffrent, gas mark 5 for 15min then turn up to gas mark 7 for 15min, leave to stand and enjoy!!
