scolopax
I eventually summoned up the courage to rake around in the freezer and extract a big Canada goose which had been in residence since Sept 2nd 2012. I intended to cook it on a low heat all afternoon but as per normal other things got in the way and it was only in the oven for a couple of hours, just goose in a roasting dish in the oven, simple as. Anyways, it was delish, I knew it was going to be a good one when the legs bones pulled out when I tried to lift it out the roasting dish. It really was falling off the bone, and it was not a young goose either. Tasted fantastic too, so much so that even when stripping the remaining meat from the carcasses the day after for the dogs most of it ended up on my plate and not in the dogs dishes. Just a shame we have so few Canada's!
Paul T
Look on the bright side - at least you'll be able to drop greylags in summer to make up for the shortfall in Canadas Still can't get my head round that one - it's just flamin' well wrong to have a native goose on the GL
