Morrisons and Lidl do similar, they're all good, just well filleted fish with no preservatives added. Even the best TV chefs all say frozen fish is very good. Blackpowder Posted April 27, 2015 Report Share Posted April 27, 2015 Not exactly as per OP but I am often given quantities of by catch codling from the local creel fishery. Filleted I freeze them in pack sizes we are going to use, allowed to de-frost slowly in the fridge and deep fried in a light batter they are nothing short of perfect. To me these cod fillets are as good as the legendary haddock the freezing and de-frosting seems to make for a drier and firmer flesh. Most white fish benefit from being kept on ice or in a fridge for around at least 12 hours before cooking. Fresh from the sea is liable to flake into small pieces in the pan.
