Cranfield Posted April 8, 2007 Report Share Posted April 8, 2007 I have always been told to only eat small congers, put the bigger ones back as they don't taste so good. They do need soaking overnight in milk, as they have a lot of ammonia in their system, the bigger the fish the more ammonia. You can bake them, fry them, etc, exactly as you would a freshwater eel. JRDS Posted April 10, 2007 Report Share Posted April 10, 2007 I had a Conger steak in a sauce last time I went to Portugal, can't remember the detail but it was bloody marvelous B) Probably about 4 inches across so from a smallish fish.
