Hey henry those are some bright red fillets you have there, do you fish yourself or did you buy them? what sawdust do you use as i used to manage a smokehouse and we used dust and chips from old whisky barrels. Do you also brine the fillets first?

Yes I fish, I use any hardwoods, but usually cherry(there are lots near me) oak, beech, birch and ash.

I don`t brine I salt as I can`t be bothered with the measurements. I have a galv bin that is awaiting conversion ATM but will post pics of the conversion when I do it.
