weejohn Posted May 30, 2007 Report Share Posted May 30, 2007 Hey henry those are some bright red fillets you have there, do you fish yourself or did you buy them? what sawdust do you use as i used to manage a smokehouse and we used dust and chips from old whisky barrels. Do you also brine the fillets first? Yes I fish, I use any hardwoods, but usually cherry(there are lots near me) oak, beech, birch and ash. I don`t brine I salt as I can`t be bothered with the measurements. I have a galv bin that is awaiting conversion ATM but will post pics of the conversion when I do it.
