Ended up nicely cold smoked.............Meat is still RAW with a nice smoked coating.......... Next step.............pull it from bone....................cook it up..........press it down................. Then Ill be eating it for about a week........................ I have used apple, plum, apricot and peach to very good effect as well. For fish it is alder all the way, when I was stationed in Alaska, fresh sockeye smoked with alder wood, a combo that couldn't be beaten.
