Rabbits

I probably should know this but I dont, so hopefully one of you can put me right.

 

From time to time, I find the fatty layer on a rabbit is a strong yellow colour instead of the normal white. Why is this, and is the meat ok to eat?. Everything else looks ok, ie eyes/ liver/kidneys etc, but I have tended to discard the rabbits when I find this colouring.
