Grate as many taters as you need into a clean tea towel and squeeze out excess water place in a bowl(you could add grated onion now if you like)add salt and pepper,mix in just enough beaten egg to make it bind slightly,and VIOLA!!!Just fry them a little at a time and if your doing lots keep `em warm in the oven BON APPETIT :rolleyes:
