As a rule, you really want to put the source as close to the display, expecially if your feeding HD through HDMI. So I'd have to agree with Harfordwmj about Multiroom. You could go the route of a centralised AV cabinet and a quality HDMI distribution switch from Crestron. This would allow all sources, DVD, SKY box#1 & #2 to be shared by all displays and feed the HDMI stream over your Cat5(e) infrastructure, but you wouldn't get around the shared Sky channel without the additional box.
