henry d Posted February 11, 2010 Report Share Posted February 11, 2010 I had 2 old cock pheasant hanging in the shed since the last week of the season and decided, as they were old fully spurred fellas, to mince them. I had just recently done a few batches of goose and pigeon, and as we were going to have a Thai meal tonight, I improvised. Basically it is minced pheasant, garlic, corriander, cumin(both toasted first then ground), corriander leaf, chilli, nam pla(or it`s UK brother Worcester sauce) and sunflower oil. I haven`t added the ingredient weights and measures as I just added as I went, but if you have a batch of mince, try adding it in the descending sizes as it reads above and experiment. I may add the approx. measures at a later date when I try it again. To cook simply stick some bamboo skewers in water for 30 mins, so they don`t burn and assemble the meat onto the skewers and grill or griddle until done, serve with sweet chilli sauce, if you like.
