Jimbo57 Posted April 20, 2010 Report Share Posted April 20, 2010 If you take it to the game dealer, gralloched and beheaded, expect about £2.20 per kilo (same as £1 per lb.). You'll get a bit more if you can find a restaurant that will take whole carcasses from you at the back door but the new food hygiene regulations (thanks a bundle EU) make this less easy than previously. I was under the impression that under the new regs if you SELL the carcase or any meat into the food chain (in our case that will be to a game dealer or possibly restaurant) you had to be registered and have a registration number so the meat can tagged with your reg no and be be traced back if there's a problem? If you look at the flow chart on page 3 of the document http://www.food.gov.uk/foodindustry/meat/w...eguidance"]http://www.food.gov.uk/foodindustry/meat/wildgameguidance it would appear that the only exemption is if you are supplying small quantities 'for private consumption' as soon as payment is involved, the regs would appear to kick in. If you have done a DSC1 course rcently that included a paper on the regs and a pass gives 'trained hunter' status, along with your own reg no for tagging so with that you can legally sell into game handling establishments.
