I am good at making big hearty casseroles from them in the winter time but I am interested in your recipes for the summer. Beretta28g Posted July 31, 2010 Report Share Posted July 31, 2010 Gut, skin and bone 5 rabbits. Mince rabbit and pre boiled potato together. Finely chop some aprocoits Mix the apricots and seasoning to taste( garlic, peper, salt, herbs, are usually good) Mix all together and add a slight amount of cider. adam f Posted August 1, 2010 Report Share Posted August 1, 2010 Bone the legs out, and take the saddles, discard the rest. Pop into a bowl with a couple of crushed cloves of garlic, a glug of balsamic vinegar, a glass of red wine and a handful of fresh chopped rosemary. Leave for at least 2 hours (better if 12 hours) then pop on the BBQ for a few mins - lovely and moist and full of flavour.
