Pheasant.

Amongst the usual Turkey etc tomorrow I'm having a Pheasant.

 

It just goes through my mind as I consider all the old favorite dressings/sauces...do any of you have your own invented home made dressing that you are prepared to share the recipe for, just feel like something different with it.

I created one on Sunday which was really lovely...

 

I got a Christmas hamper from work which contains some Damson sauce...

 

I browned some pheasant breasts in a pan then roasted them in the oven, when they were done, while they were resting, in the same pan put some finely sliced red onion a **** of butter and soften the onions. Then added red wine and a couple of spoons of this damson sauce which was then served over the breast on mash potato. It was really lovely, worth a try!
