Need a few tips

The top and the bottom are hazel and probably the middle too but I cant see enough detail. Hazel is probably the most popular wood for making sticks. Now is a good time to cut just before the sap is starting to rise in earnest although I would favour December/January.

Looks like hazel and you can still get away with cutting now,just cut them 2" oversize(allows for any splitting)and leave for a year to season somewhere that won`t get too hot.

Next year,if you can,cut themdown to a stool a couple of inches above ground height(see March`s issue of Sporting shooter)

yep that old place was once copiced, if you intend to make sticks you should take out some of the stronger growths with a chain saw, also holly makes good sticks, as does blackthorn, i know a place near HALIFAX for good holly, as for black thorn , hmmmm , just as is starts to get near usefull , the council come along with their hydrolic flail hedge murderes, let me know how close to halifax you are , i will show you some good sticks
