Seriously woodie & probably Cd's are a strongish flavour, so I think maybe a medium curry but with a side dish of lime pickles or chille pickles would be ok....maybe. The pigeons & CD's around here are mostly scems or ferals so wont be trying a curry with those???

 

Although having said that the feed they get from around here neighbours etc, they would probably be ok. Fattest ferals I've ever seen surprised they can fly.

Pigeon tastes just like a nice bit of sirloin steak - or at least the ones I eat do! So, id probably go for any curry which would normally be beef based. Maybe a nice beef madras? Although personally i think it would probably be a bit of a waste of pigeon, as i prefer them lightly fried so they melt in your mouth. Bit like beef, if you cook them for a medium amount of time they can get a bit rubbery, so its either flash fry them, or stew them up for a while.

 

Ive had rabbit currys before, and they were spot on.

Curry is my favourite use for pigeon. I treat it a bit like Carribean curry goat. The flavour of pigeon changes according to how long you hang it. It's pretty strong and earthy but progresses through a sort of lamb/beef flavour then something similar to liver/kidney. Frying it in butter is great but I found olive oil made it too strong.
