Thunderbird
And that's the SIMPLEST and EASIEST you can think of??? Seriously, thanks because that does sound delicious and is one for a later date, but this time I'm looking for a little less elaborate method. Fried in salt, pepper and plenty of garlic butter ? That was more along the lines I was thinking this time. Ta Edited November 30, 2011 by Thunderbird

Shropshire_Lad
Season in salt and pepper and slit the fillets and add a touch of philadelphia cheese. Pre heat oven to 180c. Wrap fillets in bacon to cover. Fry in olive oil 5 minutes per side, 10 minutes in total. Place in dish with a little oil in pre heated oven for 10 minutes then serve with veg of your choice. Can't be bettered! So simple even I can do it! atvb Paul.

Shropshire_Lad
Sounds good! For Many years we hardly ever ate any game or Rabbits that we shot, always selling or giving away. All that changed when our daughters showed an interest in eating what we shot, all about getting the right recipe. Find one that you like and you start to think why the **** have we not been eating this for years? Somerset Rabbit is still way up there yet ;-) atvb Paul. Thunderbird
We had some brilliant rabbit at the Cotswold dinner in August. Converted a few people I think.
