aris Posted January 27, 2013 Report Share Posted January 27, 2013 You can use it very similar to chicken. Try this: Chop into chunks, on the bone. Brown them off in some oil, then remove and sweat down some onions. Add some pimento/Jamaican pepper, and deglaze pan with a glass of dry white wine. Let that simmer off a bit and then add a can or two of chopped tomatoes, salt, pepper.. Add rabbit, bring to a boil, then put on a simmer until tender (if using a cast iron pot Iike Le Creuset, you can put in the oven). This is very nice served with pasta as it makes a delicious sauce, and can be prepared well in advance, and even refrigerated then re-heated.
