Duck, butternut squash strips, courgette strips with carrot bits, in a lemon butter. British cheese board and Scottish Oat cakes. Need a decent veg to go with this lot, any suggestions? Its not clear if the partridge and duck are separate courses, if they are then perhaps a pea pure with cardamom and a hint of wild mint for the partridge and a thick red berry coulis, served warm with a swirl of balsamic for the duck. Stuffed the duck with Peas pudding with butter and seasoning 1 partridge with orange and one with chesnut Honey roast parsnips butternut squash Roasties done in Goose fat. All liked it, some more converts and orders for any more Quite surprising that most had not tried game before, but all said they would be now.
