Yello Thai curry Pigeon-pheasant

Well the pic is here but the meal has gone already :lol:

 

I made a Thai curry with Pigeon and Pheasant and it went down a treat.

 

 

 

Main dish

 

1 pheasant (breasts)

1 pigeon (breasts)

2 cloves of garlic

1 small HOT chilli

10 shallots

1tbs double cream

1/2 small tin of coconut milk

fresh turmeric

butter

 

Seal the breasts in a frying pan using a **** of butter then slice into thin strips and leave on a plate

 

Add the sliced shallots to the pan with the sliced garlic and cook for approx 3 mins

 

Add the finely sliced chilli

 

Pour in the coconut milk and add the finely sliced turmeric

 

after around 2 mins add the sliced breasts and pour the cream over the top

 

Place pan on a low heat cover and leave to simmer for around 15 mins

 

 

 

 

 

In the mean time make a batch of cous cous but instead of using cooking oil use Butter and a dash of salt.

 

 

 

 

 

Make a small round disk of Cous cous in the centre of the plate and then put the curry gently onto the cous cous place some shredded lettuce on the side of the place with some chopped cherry tomoto's and cucumber. Note i made cucumber batons to place round the plate.

 

Pour the thai curry sauce over the top (or round the sides if you prefer) and serve

 

VERY nice with a glass of semi dry white wine :stupid:
