ciltalgarth Posted January 14, 2007 Report Share Posted January 14, 2007 I fined if you wrap them in bacon and then foil and oven cook them breast side down it keeps the juices in the breast meat. serve with roast potatoes, parsnips and sweet potatoes. white fox Posted January 14, 2007 Report Share Posted January 14, 2007 Woodcock - only way to do them. Do not remove innards. Make a round of fried bread - or use toast. Place bird on bread. Place some bacon over the breast. Roast in oven 'til done. The juices run down onto the bread - perfect. Serve and enjoy - it is the best. Nope - the woodcock excretes as soon as it takes off so there is never any **** in it's bowles whilst flying. The innards dissolve under heat and create a rather pleasant juice (apparently) The traditional way is to pluck them, cut off their legs and wings and then tuck their beack back under the remaining wing. To be honest I don't think I could stomach eating it like that. It's just perceptions though like anything. I think I've mentioned before a friend who's wife is from Nigeria. She consideres pheasant head to be a delicasy and eats it, cooke with eyes, brain the lot. Just what you're used to - Personally I wouldn't.
