Daveo26
Iv eaten squirrel a few times, young tender ones simply roasted! I want to try them another way now that I'm convinced they taste good. Ideally something with mush rooms, anyone got any ideas?

aris
What does this rodent taste like?
felly100
Some say like a cross between duck and lamb. Wild boar I reckon(in miniature ).
Daveo26
They are pretty good, I shoot quite a lot of squirrels and it seemed like a waste not to use the meat. I mainly just use the young ones, I wouldn't want to eat one of them big old males with the giant coin purse scrotum. Bit of a pig to skin though. Try one
malkiserow
a slow cooker is your friend with these
neillfrbs
you need a slow cooker for most of the stuff we shoot. lol
aris
Might have to give them a go sometime - sounds like some slow braising in red wine with shallots may do the trick. I will just have to get my head around the fact that they are 'rodents'

Daveo26
Lot of talk of slow cookers, I think that would be the way to go with a big old squizzer but the ones iv prepared are all this years. Small and tender, I'm going to braise them, with garlic and shallots, Fry some mushrooms off combine the meat and mushrooms and serve with roast veg. malkiserow
They are a cracking meat and often underestimated. They (even youngies) are a bit chewy at the best of times. the other way is to give them a good long zapp in the pressure cooker to "melt" the tendons etc, Hope you enjoy them. Rodger that, got some bacon in the mix I just boil em and feed em to my springer, she loves em. I just freeze them to kill off any parasites then feed em raw, only cook em when I'm eating them
