Keith
Having shot ten woodies with my air gun in my long back garden in Harrow over the last couple of weeks (the latest at 8.00 last night), I'd welcome tips on skinning them. I like to skin the whole bird - so i can roast them with smoked bacon and dried plums. My method of plucking off the breast feathers (after removing the head, tail, wings and feet), slitting the skin and peeling it back over the breasts, what remains of the legs and then off the rest of the bird works reasonably well but is fiddly and takes time. It also means pigeon feathers everywhere. Is there a quick method that I don't know of? If - when I shoot over a farm through Will Beasley later in the month - a i bag a load of birds it will take hours. Obviously just plucking the breast and slicing out the breast meat is much quicker, but I like to cook the whole bird a lot of the time. lurcherboy
There is hardly any usefull meat other than the breast Keith so just try this. It takes 20 seconds a bird. Break wings of at the breast. Pull a few feather off at the bottom of the Breast bone. Run finger nail over the crest splitting the skin open. Put two fingers under breast bone and the lift the breast bone with breasts attached off in one go. You should then have two breasts on the bone that will keep perfect shape in the freezer. Ta K Personally I don't find it takes to long to pluck a pigeon, I leave everything on before plucking i.e. feet, wings etc if you cut these off first the skin just rips when plucking and makes it a right pain in the a**e. I usually only take off the breast, as described by Lurcherboy. Leave yer plums out in the open air that'll keep em dry, might not go down to well with the neighbors though. beatingisbest
What i do, is i pluck a small patch about the size of a 2p coin, pinch the skin, cut through it, peel the skin away from the breasts, slice the breasts off, wash them under a tap and into a freezer bag, then put them in the freezer, takes a few seconds a bird when you get the hang of it. simplesmasher
quickest way i have found to get the whole chest off the bird is to lay the pigeon on the ground in front of you on its back with its head furthest away stand on th wings then take hold of the legs and pull hard. belive it or not this removes the inards and the legs and the head in one quick movement. sounds tricky but try it as it is very easy and quick technique can be used on most birds never tried on goose or duck but i aint that fond of it regards andy

pin
Personally I don't think this works great with smaller birds, great with pheasant etc. Easier to crown it
