Sausages

Today decided to have a go at making some sausages, popped round a mates house who had a mincer and a manual sausage machine. 

Had 4kg of venison so minced it, added some pork mince and a hunters feast mix for flavour. 

Photo of the results. Before and after, might be in after then before photo order.

Cant wait to have a go myself. I have a mate who is a cheff and arranged for him to show me the basics. He is talking about using saltpetre () and also making some salami.

We had some smoked meat sticks as a snack whilst doing it. And yeah used the pink danger powder to cure it... Haha. it made close to 80 sausages from 4Kg of meet, two haunches... Didn't taste  that bad either.
