remytherussell Posted April 22, 2004 Report Share Posted April 22, 2004 Here is a nice one. Joint a young rabbit. Soak in cold water for 30 min. Remove and dry. Dust the joints with seasoned flour. Try putting the flour in a plastic carrier bag, put the meat in and toss it around. Save the unused flour. Heat a frying pan and melt some butter. Fry the joints lightly until just browned. Remove joints to a casserole. Fry a chopped onion in the pan, add to casserole. Fry some chopped bacon in the pan and add to casserole. Ditto some chopped mushrooms, add English mustard and a can of lager or beer and the remaining flour. Season with salt & pepper. Pour this over the rabbit. Cover and cook in med oven for 1 1/2 hours until rabbit is tender. When cooked remove the joints etc to a warm serving dish. Pour the remaining juices into a saucepan and reduce by a third.
