1. skin and chop carrots  
2. boil until soft
3. drain
4. mash
5. add cople spoons of sugar
6. add loads of black pepper
7. add good wedge of butter
8. add good tot of cream sherry (pale cream will do but not as good)

 

usually make this with pheasant (roast) partridge...duck..

That looks ace! And I bet those carrots are great with pheasant- I’m definitely going to give them a try come autumn.
