salisburykeeper
Ive got a lot of british wildlife residing in my freezer so i was thinking of getting a sausage making machine and turning the lot of it into bangers, has anyone made their own sausages before?? considering the price the supermarkets are now demanding for meat i thought it would be a good idea. Yes I make my own! The mincer is the cheap part you can get a good electric one now for around £40 The stuffer is the swine :o The cheapest I have found and seems to be a decent quality one is here http://www.northerntooluk.com/products.asp?partno=604005E The mincers have what they tell you is a stuffing attatchment but in all fairness you would be lucky to stuff 2 links with it before you have to stop and top up the hopper. Buy a dedicated stuffer YEAH they are more expensive but well worth the money if your going to be doing this a lot. Skins can be bought from E-bay or perhaps your local butcher can let you have some Collogen are a bit fiddly but I can manage and the Hog casings seem to be the best option B) You can get all the info you need off the internet but I tend to try new mixes when making my own. Some were nice some were bin fodder. Never use smoked bacon and herbs together Edited January 13, 2008 by Lord Geordie
pin
There are forums for everything these days, and this one http://forum.sausagemaking.org/ is exactly where you need to be for the info you need. Cures, stuffing, suppliers of casings as well as recipes and quantity of fat required all there on tap :o
njc110381
You need one of these buddy I got it from http://www.bushwear.co.uk/ProductDetails.a...product_id=9215 There's no picture on the site so I added one of mine. The bag is for scale, it's a pretty big bit of kit but does the job great. Comes with 3 sizes of nozzle so you can decide how big you want your sausage to be :o

Lord Geordie
Oh and one last thing Instead of using what they call Cerial you just use bread crumbs. Buy a few loafes of bread from the supermarket when reduced to nothing cause they are going stale and chuck them through the mincer. I will root about as I beleive I have the ingredients for Sausage Seasonings here too Edited January 13, 2008 by Lord Geordie
fenn
Hi I sometimes i make small amouts of game sausages myself but last week we ferreted 21 rabbits, after taking all of the meat off we were left with 23lb of meat i sent this down to my local butcher who charged me £20 when they came back there was 37lb of sausages (234 sausages to be exact). That worked out a 54p/lb. In my mind for big loads its far far easier and cheaper than doing it yourself. FENN
JJaxeman
I started having ago at this myself a few moths back with a Lidol special for £29.99 Mincer/Sausage maker, and like LG say's its not easy keeping the stuffer side of it going but with practise was ok. As far as skins (Natural Hog's I have been told are best) and any extras have always got the from the Sausage Making Uk thingy site or if your are lucky they do Ebay aswell and you can sometimes pick up more of a bargain from them on there. Good Luck it's alot of fun and BBQ season is ony a short way away

Lord Geordie
That Mincer has done a great deal and is STILL going strong. The best purchase I have made I have some Venison to go next and see what that comes out like
