terrier
Does geese need a special treatment when you shot one, I read about Salmonnella infected meat. Is there a bigger chance for these infection if you let the guts in it for more then an hour or so (?) How do you "field dress" a geese properly? Same as the pheasant in the "sticky"? henry d
Don`t worry, I have left geese/duck for several days before prep. Have a look here !!
sandgrounder
I always allow at least two days hanging before plucking geese (for hanging read lying on the garage floor). Any earlier and i find the feathers even more difficult to pluck.

Billy.
I prepare my goose by being completely honest and just tell it straight that it's going to die.
