Pigeons

Hi,

I shot two pigeons last Saturday. I chopped them up on the Monday and put the breats in the fridge since then. I've eaten two but wanted to know the following:

 

A) Do you think I'll be okay to eat the other two tonight - still alright to eat?

:P Can you freeze pigeon meat okay - assume yes but I've never done it before!

For a pigeon that has to be frozen, is best done straight after you're finished crowning, without the usual 1 day hanging. The freezing effect will give them the equivalent of a days hanging.

 

A frozen pigeon will keep in the freezer for about a year, so it's always nice to have a few.

 

My girlfriend's 's mum cooked a load up that i gave to her after a days shooting. She put them in waterproof cook bags and filled them with brandy and other spices and boiled them in the bag. They were lovely!

 

Don't forget that when you cook pigeon, it always the tastiest when it is cooked rare, especially fresh after shooting. Unlike chicken, it is not a dangerous meat to eat rare.

 

A week in the fridge should be ok. If chicken lasts a couple of weeks (by seeing its sell by date) I'm sure a pigeon will last slightly longer, as it's not been through the long food processing chain and delivery and supermarket time.

 

Just smell the meat and obviously inspect it for anything unusual.
