lord_seagrave Posted September 5, 2009 Report Share Posted September 5, 2009 Okay, not a recipe, but I'd just like to comment on the excellent service I (again) received at Kim Libretto & Daughters, butcher, of Wood Vale, East Dulwich. A 'big up', as the kids might call it. For one reason and another it is going to be a lean September at Seagrave Towers and I was on the scrounge for some inexpensive pork for a goulash that (with the regulation fist-sized dumplings) should last Lady Seagrave and I for a couple of nights this week and (frozen) next week as well. Whilst not exactly a sob story, Mr. Libretto looked kindly on my request and disappeared out the back to return with the lion's share of half a pig, whereupon he separated off the foreleg, deftly boned out the hand and shoulder and, a couple of minutes later, presented me with two piles of diced pork (one at 1,550g, the other at 990g), plus the skin for the sauce. By my reckoning, I could get dinner for eight out of that lot and still enjoy two nights of leftovers! I won't say what I asked to pay, but it would have cost me more in Sainsbury's I know from experience that the free-range pigs he procures (from Blythburgh, Suffolk, so I'm informed) are some of the tastiest in London (a roasted middle belly on the bone was one of the most outstanding pork dishes I've ever cooked), so to say that I'm looking forward to getting on the outside of this is an understatement. What an absolutely top guy. If you ever have occasion to pass through this part of London, his shop is most emphatically worth a visit. I do hope that her Ladyship understands that a month of penury and leftovers is worth it, if it shaves seconds off your commute. I know the farm that Libretto sources his pork from, and the pigs are most definitely contented, well-tended animals. I have only visited Mr Libretto's shop once, but it is as you say a shrine to excellent and well-priced meat, and well worth a visit. Not only that, but Alan the Builder is scheduled to put the finishing touches to Seagrave Towers in a couple of weeks' time, and will, with a tedious inevitability, require his tithe in the form of non-sequential used notes, rather than leftover goulash... Clearly he has never before eaten my caraway and parsley dumplings. But I digress.
