poontang
Do they really taste as bad as some people say? I shot a couple on Sunday, but unsure on the best way to cook them. Most people i speak to reckon they taste pretty rank. I've got fairly good guts, but i'd like to keep them inside me if i can  Any ideas much appreciated. henry d
Soak overnight in milk, Clarissa Dickson-Wright told me it took the "Esturine" flavour away. However since then I haven`t shot one
marlin vs
The're not that bad, take the breasts off and fry them in olive oil and a little garlic, it's a simple way to do them without any hassle.

poontang
Thank you gentlemen, some food for thought there Henry, interesting about the milk. I had heard that before, apparently it has to be full fat, so think i may give that a try and see how it goes. Thanks again.
scolopax
The last one I ate was delicious just plain roasted. I took the breasts off the cooked carcasse, shredded them with a fork and had hot wigeon sandwiches with cranberry sauce.
MC
Wigeon around here at the moment will be fine as they have only just arrived, come the end of december they will be awful and the only thing I do with them is heavily marinate and do as Aromatic crispy duck. This thread has just reminded me I have one hanging in the garage from sunday
