magman
Chocolate spread on a crust works well just make sure the crust cannot walk
SSS
I have used both of the above, and they are both fantastic baits, I never failed to catch on peanut butter
Colster
Another vote for peanut butter, add a little water so it's sloppy. That way the rat can't take the bait away into cover.

Dekers
You may even get the bonus of a Grey if you use peanut butter!! They are very good at picking up bait and running off with it, and always will do if possible. Purely a survival instinct, they do not want to be exposed whilst eating. So, as others have said, make sure they can't just pick the bait up and run off with it!
