Order for squirell

Thanks i suppose are due to HFW and Gordon Ramsey's the F word for their great outlook on squirell. I had a guy that i sold some pigeons to, ask me to get him one today. Give the bloke credit, i sold him some pigeons on saturday which he had never tried before, spoke to him today and asked what he thought to which he replied " bloody disgusting, even the dog wouldn't eat them ". Not to be put off though he asked me to get him a couple of rabbits and a squirell as he wants to try different things out.

 

I must admit that i've never tried pigeon as after breasting them it doesn't appeal to me but he said that they tasted like liver but 10 times stronger. He said he cooked them for around 12 hours in a pressure cooker. Would that of changed the taste or is this normal ?

Tell the guy to slice the pigeon breast into fine pieces, marinade it in generous helping of soy sauce olive oil and water. Then stir fry them with noodles. Delicious and no gamey taste- I don't think you can put too much soy sauce on them!!

 

Might I suggest u give him another pigeon with those instructions FOC, and see what he makes of it. After all the more people we have eating pigeon in the UK the better, also give him a link to this site and the recipe section.

There is a new publication out that I saw for the first time yesterday called "Country kitchen" and basically does what it says on the cover. THere are a few good recipies for pigeon in there. But as a rule you flash fry the young birds and roast the older ones. BUT NOT FOR 12 HOURS!!!!

 

As for squirrell then as far as I am concerned they are underrated as a food, if you eat rabbit then you should eat squirrell :lol::D

Give him some advice on cooking before you sell him anything else

Printed him off every recipe that i could find on this forum even including tips on smoking them plus others that i found on the net. It was his own decision to pressure cook them for 12 hours as he was worried about them being tough. However, i did say that i would give him some more FOC, i think i was as gutted as he was that he didn't like them. I get quite passionate about food and cooking and although i didn't cook them i would really have liked for him to have enjoyed them. :D

How do you cook it lurcherboy? you got me curious now, i'll be up the woods tomorrow looking for one :D

If you check out NTTF's previous posts you will find dozens of recipes for squirrel.

 

I just joint them, boil them and pick the meat off when cold. They make excellent sandwich fillers with bar-b-que sauce :lol:
