JONO Posted January 9, 2006 Report Share Posted January 9, 2006 A quickie I tried last night after watching Hugh F-Witt's recent road trip...was absolutley delicious. Get your barbie cooking with wood rather than charcoal - Soak some skewers (3 per bird) in water whilst you prep the birds... - Cut out the backbone with kitchen scissors, flip over and press to flatten with the heel of your hand. - Place a large **** of seasoned butter on the flesh-side (nice touch is to add and blend-in some finely chopped thyme or tarragon). - Stretch out some streaky bacon with the back of a kitchen knife (about 4 rashers per bird) and wrap the birds up - securing with the skewers and trimming the excess ends. - Cook on your glowing wood embers for 8-9 mins a side (for medium-well) or slightly less if you prefer. - Serve with a glass of red, goose-fat roasted spuds, green beans and a dollop of braised red cabbage.
