England and Wales

For Muntjac and Chinese Water deer only- a rifle with a minimum calibre of not less than .220 inches and muzzle energy of not less than 1000 foot pounds and a bullet weight of not less than 50 grains may be used.

 

For all deer of any species - a minimum calibre of .240 and minimum muzzle energy of 1,700 foot pounds is the legal requirement.

 

Scotland, NI etc are different but .240 and 1,700ft/lbs covers all in the UK i think hence why .243 is popular anything less limits your options

Do you mean what calibres are best for each species? If so that arguement will rage forever and you'll get answers right from the .22 centrefires for the small species right up to big magnums for hill Reds. Some people even shoot munties with big magnums so it really is a case of each to their own! My personal thought is .243 - fine up to Fallow Does. Past that you want 6.5 or bigger ideally and for big Sika and Red Stags .270 or .308/.30-06 is preferable!
