ollie Posted November 11, 2010 Report Share Posted November 11, 2010 Must say this is a first for me. Glensman culled a young billy goat at the weekend so I skinned and butchered it yesterday. I have made a goat tagine out of the loin and meat from the front leg. I have tried it and I must say it is very tasty. I also have a back leg in the fridge which will be roasted on Sunday. Newsportshooter Posted November 11, 2010 Report Share Posted November 11, 2010 I had a nice bit of wild goat curry (made form the loin) and a nice roast made from the leg of a nice young billy in NZ.. Was almost as nice as lamb but I cooked it well to ensure it had no parisites (paranoid) as such it was a little tougher than roast lamb... My lips and throat steamed for a day, enjoyed it though. If you like hot authentic WI recipes search the internet. Might help with the "lesser cuts". Enjoy!
