I don't do the saddle thing, I have those loins off and have them flash fried in butter and olive oil with a red wine reduction. camokid Posted January 11, 2012 Report Share Posted January 11, 2012 i like my game cooking and use venison in loads of dishes Meat balls are grate and the kids eat them to, mince the meat with smoked bacon add salt pepper dried cranberries and mustard powder and onions after roll and oven. Roasting i always cover with bacon again or pig skin (crackle) it helps keep moist and adds to flavour a simple roast with salted butter thyme half a bottle of red and fresh black pudding on the side i also use it in stu, spaghetti bolognaise, game pies, stir fry . and love to flash fry the loin in butter with mushrooms onions and capers. it really can be used so many ways Quote Link to comment Share on other sites More sharing options...

SGS A decently hung Devon Red is very nice much better than Fallow. Not too keen on CWD, they taste of the marsh they live on, I have found.
