Anyone make Rabbit Sausages

Yep, I've done them and ended up using minced pork belly fat, or pork chop fat minced with the rabbit mince......in my experience they need more salt than you think, heavily season!

 

I did try some basting fat from the butcher from beast, but it didn't work out so.

 

 

Hi guys,

Just wondering if anyone makes rabbit sausages?

I have a plentiful supply of rabbit and was looking for another way to use the meat

Due to the leaness of the meat i presume some kind of additional fat must be added?

I would be grateful for any recipes, thanks.

I'd be tempted to mince them and use from there, if you want something to bbq then burgers but it gives you more versatility to vary things in small quantities. If you go down the sausage route just look up venison recipes as they usually use added fat

not sausage but burgers .

5 kg boneless rabbit meat.

3 kg Bacon misshapes (sold in 1 kg packs for 1,50 gbp)

2 kg onions

4 eggs

500g bread crumbs

 

1 whole garlic ( peal and crush)

lots of salt, black pepper, nutmeg, thyme, rosemary.

 

fry onions on olive oil and mince with the lot

work it in bowl until smooth mass .

shape burgers fry and enjoy.

i am making them in lots for freezer.

superb in bun with tomato, lettuce. mustard + beer :good:
